The banana pudding really needs some time in the fridge to set. It tastes better, too. Make it the day before you need it, it’s worth it. Then once the banana pudding is assembled, you can enjoy it straight away, but we like it after storing in the fridge for a few more hours so the bananas give off some flavor and the cookies get some give to them.
Ingredient:
- 1/3 cup cornstarch
- 3 cups whole milk
- 8 egg yolks
- 3/4 cup sugar
- Pinch sea salt
- 1 inch of a vanilla bean or 1 1/2 teaspoons vanilla extract
- 5 to 6 ripe bananas, sliced
- About 40 small chocolate chip cookies or vanilla wafers
- 1 1/2 cups heavy cream
