Blue Corn, Cherry, and Chocolate Chip Cookies

With a soft interior that has a hint of almond flavor, these fresh cherry–studded cookies are not only colorful but also incredibly delicious.

Ingredient:

  • 1 ¼ cups packed dark brown sugar
  • ¾ cup unsalted butter (6 ounces), at room temperature
  • 1 large egg, at room temperature
  • 2 teaspoons almond extract
  • ½ teaspoon vanilla extract
  • 1 ½ cups blue corn flour (about 6 2/5 ounces)
  • ¾ cup all-purpose flour (about 3 1/4 ounces)
  • ¾ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ½ cups dark chocolate chips or chopped feves (about 7 ounces)
  • 1 ½ cups fresh red cherries, pitted and halved (about 7 ounces)
