Ingredient:

  • 1 teaspoon granulated sugar
  • 1 teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 2 tablespoons vegetable shortening (about 3/4 ounces)
  • ½ cup unsalted butter (4 ounces), frozen or very cold
  • Cooking spray
  • 1 ⅓ cup buttermilk, chilled (or substitute 1 cup low-fat buttermilk plus 1/3 cup sour cream)
