These tasty, no-bake energy balls have all the flavor of carrot cake thanks to carrots, walnuts, coconut flakes, and fragrant spices. I add dried fruit for some natural sweetness so there's no need to add sugar. Perfect for that little boost of energy when you need it most!

Ingredient:

  • 15 pitted Deglet Noor dates
  • 5 dried apricots
  • 1 cup chopped carrot
  • 1 cup chopped walnuts
  • ⅓ cup unsweetened coconut flakes
  • ¼ cup toasted almond butter
  • 2 tablespoons flax seed meal
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon vanilla extract
  • 1 pinch salt
