My family loves this oatmeal raisin cookie recipe, which guarantees cookies that are soft cookies in the middle and a little chewy on the outside. I use an electric hand mixer to make them, but you can make this cookie dough in a stand mixer with the paddle attachment.

Ingredient:

  • 1 cup (170g) raisins
  • 3 cups (270g) old-fashioned rolled oats
  • 3/4 cup (98g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fresh ground nutmeg
  • 3/4 cup (170g) unsalted butter at room temperature
  • 1 cup (200g) packed light brown sugar
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
