Eggs, spinach, and tangy garlic and herb feta fill this quiche with Greek spanakopita flavor.

Ingredient:

  • 1 (24-ounce) package baby yukon gold potatoes, scrubbed
  • 2 tablespoons, plus 2 1/2 teaspoons kosher salt, divided (such as Diamond Crystal)
  • 4 tablespoons extra-virgin olive oil, divided
  • 1 cup chopped yellow onion
  • 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
  • 1 (6-ounce) package crumbled garlic and herb feta (about 1 cup)
  • 8 large eggs
  • 1/2 cup heavy whipping cream
  • 4 teaspoons chopped fresh dill, plus more for garnish
  • 4 teaspoons chopped fresh mint, plus more for garnish
  • 1 teaspoon grated lemon zest
  • 3/4 teaspoon garlic powder
