Grilled Herring with Peas, Mint and Meyer Lemon

Andrew Zimmern’s essence-of-spring dish features the season’s first fresh herring and sweet peas and pea shoots.

Ingredient:

  • 2 cups shelled fresh or frozen peas (10 ounces)
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons buttermilk
  • 1/4 cup fresh Meyer lemon juice
  • 2 tablespoons mint leaves, minced
  • 2 shallot, minced
  • Kosher salt
  • Pepper
  • 20 (1 1/2-ounce) whole herring, sardines or mackerel, cleaned
  • 2 tablespoons plus 1 teaspoon extra-virgin olive oil
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped tarragon
  • Sea salt
  • Black pepper
  • Pinch of crushed red pepper
  • 1 cup pea shoots (1 1/2 ounces)
  • 1 teaspoon fresh Meyer lemon juice
