This Instant Pot curry chicken is rich, creamy, and delicious. Great over jasmine or basmati rice! Garnish with chopped chives, if desired.

Ingredient:

  • 1 tablespoon coconut oil
  • 1 medium onion, chopped
  • 3 tablespoons curry powder, or to taste, divided
  • 2 cloves garlic, chopped
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (8 ounce) can tomato sauce
  • ½ cup chicken broth
  • 2 tablespoons white sugar
  • 2 pounds chicken breasts
  • salt to taste
  • ground black pepper to taste
  • 1 (14 ounce) can coconut milk
