This Loaded Strawberry Spinach Salad is a summer favorite. Serve it as a side dish or add some protein and make it an easy lunch or dinner.
Ingredient:
- 8 cups baby spinach
- 2 cups strawberries, sliced
- 3/4 cup onion, thinly sliced
- 1– 2 cups apples, chopped
- 2–3 cups roasted sweet potatoes, diced
- 1 large avocado, diced
- 1/4 cup crumbled feta, optional
- juice from two lemons (approx 1/4 cup
- 1/4 cup oil (i use avocado)
- 1/4 cup white wine vinegar
- 1 Tbps poppy seeds (or chia seeds)
- 2 tsp sugar (or to taste)
- optional protein: chicken, steak, lentils, chickpeas, hard boiled eggs
