This Loaded Strawberry Spinach Salad is a summer favorite. Serve it as a side dish or add some protein and make it an easy lunch or dinner.

Ingredient:

  • 8 cups baby spinach
  • 2 cups strawberries, sliced
  • 3/4 cup onion, thinly sliced
  • 1– 2 cups apples, chopped
  • 2–3 cups roasted sweet potatoes, diced
  • 1 large avocado, diced
  • 1/4 cup crumbled feta, optional
  • juice from two lemons (approx 1/4 cup
  • 1/4 cup oil (i use avocado)
  • 1/4 cup white wine vinegar
  • 1 Tbps poppy seeds (or chia seeds)
  • 2 tsp sugar (or to taste)
  • optional protein: chicken, steak, lentils, chickpeas, hard boiled eggs
