When I’m in a pinch for time and crave the flavors of sauerkraut, this is the recipe I turn to. Our quick and easy sauerkraut takes just over an hour, and it’s ready to eat!
Ingredient:
- 1 large head green cabbage, nearly 2 pounds
- 1 medium yellow onion, thinly sliced, about 2 cups
- 1 ¾ teaspoons fine sea salt
- 2 teaspoons caraway seeds
- 1 juniper berry, lightly crushed
- 1 allspice berry, left whole, see notes
- 1 tablespoon olive oil
- 1/2 teaspoon sugar
- 1 ¾ cups apple cider vinegar
- 1/2 cup apple cider
- 1/2 cup water
