Quick Fresh Sauerkraut

When I’m in a pinch for time and crave the flavors of sauerkraut, this is the recipe I turn to. Our quick and easy sauerkraut takes just over an hour, and it’s ready to eat!

Ingredient:

  • 1 large head green cabbage, nearly 2 pounds
  • 1 medium yellow onion, thinly sliced, about 2 cups
  • 1 ¾ teaspoons fine sea salt
  • 2 teaspoons caraway seeds
  • 1 juniper berry, lightly crushed
  • 1 allspice berry, left whole, see notes
  • 1 tablespoon olive oil
  • 1/2 teaspoon sugar
  • 1 ¾ cups apple cider vinegar
  • 1/2 cup apple cider
  • 1/2 cup water
