  • 8 dried whole shiitake mushrooms (about 1/3 cup)
  • 1 1/2 tablespoons dry sherry
  • 1/4 cup peanut oil, divided

  • 2 teaspoons cornstarch
  • 1/4 teaspoon ground white pepper
  • 1 teaspoon kosher salt
