At his former Boston gastropub, Blue Dragon, star chef Ming Tsai served these sweet and spicy sliders. They’re based on a recipe his mother made for him when he was young.
Ingredient:
- 2 tablespoons canola oil
- 2 medium red onions, finely chopped
- 1 cup finely chopped celery
- 3 tablespoons sambal oelek or other Asian chili sauce
- 2 1/2 tablespoons minced garlic
- 1 tablespoon minced peeled fresh ginger
- Kosher salt
- Freshly ground pepper
- 1 pound ground chicken thighs
- 1 pound ground pork
- 1 cup hoisin sauce
- 1 cup drained canned diced tomatoes
- 1/4 cup fresh lime juice
- 20 brioche dinner rolls, split and toasted
- Shredded iceberg lettuce and spicy pickles (optional), for serving
