Sloppy Joe Sliders with Chili-Ginger Sauce

At his former Boston gastropub, Blue Dragon, star chef Ming Tsai served these sweet and spicy sliders. They’re based on a recipe his mother made for him when he was young.

Ingredient:

  • 2 tablespoons canola oil
  • 2 medium red onions, finely chopped
  • 1 cup finely chopped celery
  • 3 tablespoons sambal oelek or other Asian chili sauce
  • 2 1/2 tablespoons minced garlic
  • 1 tablespoon minced peeled fresh ginger
  • Kosher salt
  • Freshly ground pepper
  • 1 pound ground chicken thighs
  • 1 pound ground pork
  • 1 cup hoisin sauce
  • 1 cup drained canned diced tomatoes
  • 1/4 cup fresh lime juice
  • 20 brioche dinner rolls, split and toasted
  • Shredded iceberg lettuce and spicy pickles (optional), for serving
