Smothered Steak

These steaks come to the table fall-off-the-bone tender and smothered in their own onion gravy.

Ingredient:

  • 2 (2-pound) 7-bone steaks
  • 1/2 cup white wine vinegar or sherry vinegar, plus more to finish (optional)
  • 1 tablespoon kosher salt, plus more to taste
  • 1 teaspoon cracked black pepper
  • 1/4 cup canola oil
  • 2 pounds yellow onions, finely diced
  • 1 large bay leaf
  • 2 to 3 cups rich beef stock, divided
  • 1/2 cup finely diced celery
  • 1/2 cup finely diced green bell pepper
  • 1/3 cup torn fresh tomato pieces (such as plum tomatoes)
  • 6 garlic cloves, finely chopped
  • 1/4 teaspoon cayenne pepper, plus more to taste
  • 2 tablespoons finely chopped flat-leaf parsley, for garnish
  • 2 tablespoons finely chopped scallions, for garnish
