Sole with Lemon Cream

For this simple but vibrantly flavored fish dish, we like to use firm, mild petrale sole from the Pacific coast.

Ingredient:

  • 2 tablespoons unsalted butter
  • 2 pounds sole fillets (such as petrale sole), cut into 4 pieces
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 3/4 cup heavy cream
  • 1/2 tablespoon grated lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
