Ingredient:
- 6 cups cubed watermelon
- 1/2 cup fresh herbs, we like a combination of mint and parsley, plus more for garnish
- 4 ounces (113g) feta cheese, cubed, roughly 3/4 cup
- 3 tablespoons sunflower seeds, toasted
- 1 ½ tablespoons red wine vinegar
- 1 ½ tablespoons extra-virgin olive oil
- 1/4 teaspoon fine sea salt
- Fresh ground black pepper, to taste
