A homemade rub and overnight salt dry brine make this a can’t-miss smoked chicken.

Ingredient:

  • 1 (4-pound) whole chicken, giblets removed
  • 1 tablespoon kosher salt
  • 2 teaspoons light brown sugar
  • 2 teaspoons black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon extra-virgin olive oil
  • 2 to 3 hickory wood chunks
  • 3 tablespoons unsalted butter, melted
