Ingredient:

  • 100g caster sugar
  • 100g unsalted butter, softened
  • 1 egg, beaten
  • 200g gluten-free plain flour, plus extra for dusting
  • 50g cornflour
  • ½ tsp xanthan gum
  • ¼ tsp fine sea salt
  • handful of dark chocolate chips (optional)
  • ½ lemon or orange, zested (optional)
  • demerara sugar, for sprinkling (optional)
