Matzo ball soup is a classic Jewish dish of flourless dumplings – they’re made with matzo meal – served in a comforting chicken broth.
Ingredient:
- 60g/2¼oz matzo meal
- ½ tsp salt
- 2 tbsp margarine, melted (or schmaltz, see Recipe Tip below)
- 2 large free-range eggs, lightly beaten
- 2 tbsp sparkling water
- 1 litre/1¾ pints chicken stock
- 4 bone in chicken thighs (skin removed)
- 1 large onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stick, finely chopped
- splash light oil
- small handful fresh dill, finely chopped
- salt and freshly ground black pepper
