This adaptation of Italian apple cake is moist and light — fragrant with spices and studded with chunks of fruit.

Ingredient:

  • Unsalted butter, for greasing
  • 2 green cardamom pods
  • 1 2/3 cups granulated sugar
  • 4 large eggs
  • 2 large egg yolks
  • 1/2 teaspoon kosher salt
  • 1 tablespoon orange zest
  • 2 teaspoons vanilla extract
  • 1 cup extra-virgin olive oil
  • 2 1/3 cups all-purpose flour (about 10 ounces), plus more for dusting
  • 1 tablespoon baking powder
  • 1 pound Granny Smith apples (about 2 large apples), peeled and cut into 1/2-inch pieces
  • 2 tablespoons powdered sugar
  • 1 1/2 cups lightly sweetened whipped cream, for serving
