Cookbook author and chef Asha Gomez’s striking apple pie gets a glossy finish from melted jaggery, a deep amber sugar, and piquant cumin seeds.

Ingredient:

  • 3 cups all-purpose flour, plus more for dusting
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon baking powder
  • 2 sticks plus 2 tablespoons unsalted butter, cubed and chilled
  • 7 ounces cream cheese, cubed and chilled
  • 1/4 cup ice water
  • 6 Granny Smith apples—peeled, cored and cut into 1-inch-thick wedges
  • 1/2 cup finely grated jaggery
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cumin seeds
  • 4 tablespoons unsalted butter
  • 1 teaspoon cumin seeds
  • 1/3 cup finely grated jaggery
