Chewy candied ginger melts into the sweet apple filling of this buttery, crumbly crisp.

Ingredient:

  • 3/4 cup all-purpose flour (about 3 1/4 ounces)
  • 1/4 cup packed light brown sugar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon baking powder
  • 5 tablespoons cold unsalted butter, cut into pieces
  • 1/3 cup uncooked old-fashioned regular rolled oats
  • 2 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 2 1/4 pounds Granny Smith apples (about 6 medium apples), peeled and sliced (about 7 cups)
  • 1 tablespoon fresh lemon juice
  • Pinch of kosher salt
  • 2 tablespoons all-purpose flour
  • 1 tablespoon apple brandy (such as Calvados) or Cognac
  • 1/4 cup thinly sliced crystallized ginger candy (such as Gin Gins)
